I have made a couple of minor adaptations based on the lack of availability and choice of smoked fish in Australia, but itโ€™s certainly based on my mums recipe with the heart firmly placed in Scotland ๐Ÿด๓ ง๓ ข๓ ณ๓ ฃ๓ ด๓ ฟ๐Ÿ’™ Serves 4 3 x smoked cod fillets 1 x hot smoked salmon fillet 1 leek Half a brown onion 2 cloves garlic 1 bay leaf 2 x medium potatoes 2 tbsp chopped parsley root Thickened cream Juice of half a lemon 500ml stock (I use chicken) 1 and a half tbsp oat bran Olive oil 40g butter Salt Finely slice and throughly wash the leek, slice onion, garlic, and peel and dice potatoes. Cover the base of a pan with olive oil, then add 40g butter, add your leeks, potatoes, onion, parsley root and garlic, then sweat with the lid on for 15 minutes, stirring frequently. Then add the oat bran, bay leaf and stock, stir to combine, remove the skin from the smoked cod and lay on the top. Place the lid back on pan, bring up to a simmer, and cook for 10 minutes till the potatoes are soft and fish cooked through. Remove the bay leaf. I have made a couple of minor adaptations based on the lack of availability and choice of smoked fish in Australia, but itโ€™s certainly based on my mums recipe with the heart firmly placed in Scotland ๐Ÿด๓ ง๓ ข๓ ณ๓ ฃ๓ ด๓ ฟ๐Ÿ’™ Serves 4 3 x smoked cod fillets 1 x hot smoked salmon fillet 1 leek Half a brown onion 2 cloves garlic 1 bay leaf 2 x medium potatoes 2 tbsp chopped parsley root Thickened cream Juice of half a lemon 500ml stock (I use chicken) 1 and a half tbsp oat bran Olive oil 40g butter Salt Finely slice and throughly wash the leek, slice onion, garlic, and peel and dice potatoes. Cover the base of a pan with olive oil, then add 40g butter, add your leeks, potatoes, onion, parsley root and garlic, then sweat with the lid on for 15 minutes, stirring frequently. Then add the oat bran, bay leaf and stock, stir to combine, remove the skin from the smoked cod and lay on the top. Place the lid back on pan, bring up to a simmer, and cook for 10 minutes till the potatoes are soft and fish cooked through. Remove the bay leaf. Then using a potato masher, gently slip it under the fish and roughly mash the potato. Then gently break up the fish and stir together. Add the hot smoked salmon in flakes, a pour of cream (about 50ml) season with salt if needed, grind in a heap of black pepper, add the lemon juice, and stir to combine. Put into a bowl, season with salt and finely grate in the lemon zest. To serve, ladle soup into bowls, top with the herbed cream, a drizzle of olive oil, a scatter of chives, and, if you make it, some of my crunchy savoury oat granola.
