1: Make sure your fish is dry before it hits the pan.

This may seem like a no-brainer, but it’s really important. If there’s any moisture on your fish, be it from marinating or just taking it out of the fridge, that moisture is going to turn to steam when it hits the hot oil and causes your fish to stick.

So set that fillet down on a paper towel and give it a good pat dry before you start cooking.

2: Use enough oil.

This is another mistake people often make when pan-frying. You want there to be a decent layer of oil so that the fish can float around freely and not stick, but you don’t want so much oil that it ends up being greasy.

A good rule of thumb is to use enough oil to coat the bottom and come up about 1/4 inch up the sides.

3: Don’t overcrowd your pan.

If you’re trying to fry a bunch of fish at once, don’t put them all at once or they’ll stick together and be harder to flip without breaking them apart.

Fry them in batches if you need to so that each fillet has enough space to cook evenly on all sides without touching any other pieces of fish.

With two sides that can be heated at the same time, you’ll avoid hot spots on the food that can cause some parts to cook faster than others.

How to Cook Fish in a Double-Sided Pan

You first need to preheat it. This can be done on your stovetop or in an oven that has been preheated at 400 degrees Fahrenheit (200 Celsius).

Then add oil and butter with a paper towel if desired before placing the food so that it heats up too.

Then, place the fish fillets in a single layer on one side, and don’t overcrowd them. They should be close together but not touching each other or overlapping at all!

After about two minutes, flip over onto the second side until cooked through. We recommend using tongs so that you’ll have more control and won’t damage your fish.

The total cooking time will depend on the thickness of your fillets. But it should not take more than six minutes in all to cook them through and the outer layer browned.

You can test for doneness by inserting a fork into the thickest part and seeing if it flakes easily.

Seared Fish with Lemon Butter Sauce

Ingredients:

  • One pound (454 grams) of white fish fillets (cod, tilapia, etc.), cut into four equal portions
  • One tablespoon of olive oil
  • One tablespoon butter
  • Salt and pepper to taste

For the sauce:

  • One lemon, juiced
  • Two tablespoons butter
  • Three cloves of garlic, minced
  • Pinch of salt

Directions:

Cooking the fish:

  1. Preheat your double-sided pan on medium-high heat.
  2. Add olive oil and butter, then place the fish fillets in a single layer on one side. Don’t overcrowd them!
  3. After about two minutes, flip over onto the second side until cooked through (this should take no more than six minutes).

Making the sauce:

  1. While the fish is cooking, make the lemon butter sauce.
  2. In a small pan, melt the butter over low heat.
  3. Add garlic and sauté for a minute or until fragrant.
  4. Add lemon juice and salt, then remove from heat.

Serving:

  1. Serve the fish fillets with the lemon butter sauce on top.

Grilled Fish Fillets with Pineapple Salsa

Ingredients:

  • One cup pineapple, diced small
  • Half a red onion, diced small
  • One jalapeño pepper, seeded and diced small

Directions:

  1. Preheat your double-sided pan on medium-high heat.
  2. Add olive oil and salt and pepper, then place the fish fillets in a single layer on one side. Don’t overcrowd them!
  3. After about two minutes, flip over onto the second side until cooked through (this should take no more than six minutes).

Making the sauce:

  1. While the fish is cooking, make the salsa.
  2. In a medium bowl, mix pineapple, red onion, jalapeño pepper, lime juice, honey, and salt.
  3. Set aside.

Serving:

  1. Serve the grilled fish fillets with pineapple salsa on top.

Tips for cooking fish in a double-sided pan

  • Use a heavy-duty pan with thick walls and a bottom. Thin pans can warp easily from high temperatures, so it’s important to use something durable when cooking at such high heat levels.
  • The ideal thickness is between three millimeters (0.12 inches) and five millimeters (0.20 inches).
  • If you don’t have a double-sided frying pan, you can use two pans at the same time – one for cooking and one for resting.
  • Make sure to oil your fish fillets before placing them. This will help keep them from sticking and ensure that they don’t dry out while cooking.
  • Don’t overcrowd your fish fillets! If they’re too close together, they’ll steam instead of searing and you’ll end up with a soggy dish.
  • Use tongs to flip your fish over. This will help keep them from breaking or sticking to the pan.
  • When in doubt, test for doneness by inserting a fork into the thickest part of a fillet and seeing if it flakes easily.
