This pavlova recipe is very basic and simple. If you want to make pavlova for the first time, try this recipe.

Ingredients

  • eggs 4, or a carton of egg whites
  • caster sugar or superfine sugar 250g
  • white vinegar 1 tsp
  • cornflour 1 tsp
  • strawberries 400g, hulled and halved if large
  • raspberries 300g
  • icing sugar 1 tbsp
  • blueberries 150g
  • heavy whipping cream 300ml
  • vanilla extract 1 tsp

Method

  1. Heat the oven to 150C/fan 130C/gas 2. Line a baking sheet with parchment paper and draw a large circle in pencil round a bowl or dinner plate approximately 25cm. Turn the paper over.
  2. Separate the eggs. Freeze the yolks for making custard or ice cream.
  3. Whisk the egg whites to stiff peaks form. Add the sugar, 1 tbsp at a time, whisking between each addition until the mixture is smooth, thick, and glossy.
  4. Whisk in the vinegar and cornflour.
  5. Put large spoonfuls of pavlova mixture on the parchment inside the circle until it is evenly filled.
  6. Make a dip in the center with the back of a spoon and bring up the sides a little. Put the pavlova in the oven, bake for 1 hour, turn the oven off, leave the door ajar, and let the meringue cool completely.
  7. To make the sauce, blend 75g of strawberries and 75g of the raspberries to a purée with the icing sugar, then sieve into a bowl. Softly whip the cream and vanilla until soft peaks form.
  8. Top the meringue with the cream, the rest of the fruit, and berry sauce.

  • 2½ teaspoons cornflour

  1. Preheat the oven to 180°C/160°C Fan/gas mark 4 (350 degrees Fahrenheit). Line a baking tray with parchment paper. Beat egg whites until they form stiff, glossy peaks, then beat in sugar gradually until the meringue is stiff and shiny.
  2. Sprinkle the cornflour over the meringue, then grate in a microplane of lemon zest and add 2 teaspoons of fresh-squeezed lemon juice.
  3. Gently fold with everything is thoroughly mixed in. Next, mound onto the lined baking tray and flatten it out to be a perfect circle, making sure that you smooth down all sides for an attractive finish.
  4. Place in the oven, immediately turns the temperature down to 150°C/130°C, Fan/gas mark 2/300°F, and cook for 1 hour.
  5. Remove from the oven, and let cool. But don’t leave it anywhere cold as this will make it crack too quickly. If you think your kitchen is too cool, then put the pavlova inside an oven with its door entirely open for a bit longer before taking it out to serve when ready to eat.
  6. In a small pan, fry flaked almonds on medium-high heat until slightly browned. Shake the pan every once in a while to ensure that they do not burn, and remove them from the skillet when finished so as not to continue cooking them.
  7. Whip the cream until thick and airy but still with a soft voluptuousness about it, and set it aside for a moment.
  8. Put the lemon curd into a bowl and beat it with a wooden spoon or spatula to loosen it just enough. Taste the lemon curd, and add some more zest if you want, as well as fresh juice if it’s too sweet.
  9. With a light hand, you can spread the lemon curd on top of your meringue base. Now top it with whipped cream and sprinkle some zest and flake almond to finish off this incredible dessert!
