- 220 grams of Fresh Spinach (you can also use fresh baby spinach)
- 1 tsp black pepper

- 70 grams (¾ cup) of Breadcrumbs
- 200 grams (4oz) Creamcheese
- 10 grams fresh dill chopped
Salmon and Pastry:
- 700 g (1 ½ lb) half salmon filet (skinless salmon fillet)
- Two pack ready-rolled puff pastry sheet
- One egg whisked
Creamed spinach filling:
- In a pan, heat the butter over medium heat. Add the mushrooms, shallots, and garlic, and cook until the shallots are soft.
- Add spinach, black pepper & pinch of salt, and cook until spinach has wilted.
- Add the cream cheese, breadcrumbs, and chopped dill to a mixing bowl. Remove from the heat and set aside.

- Preheat the oven to 180°c Fan /200° C /400° F /gas mark 6
- Lay baking sheet with parchment paper.
- Place one ready-rolled puff pastry sheet onto the prepared baking sheets.
- Place a piece of salmon on a puff pastry sheet. Spread the cheesy spinach mixture filling on top of the salmon fillet.
- Place the second layer of puff pastry on top of the fish and spinach, and press it down around the edges.
- Trim off any excess dough, and fold the first sheet of pastry to meet the second.

- With a sharp knife, score the top of the box in a criss-cross pattern. Make sure you don’t cut too deep with this technique.
- Brush the pastry with the whisked egg all over.
