  1. Add your cooked spinach to 2tbs of melted butter in a large skillet and gently saute for 2-3 minutes over medium-high heat.
  2. Add 4-5 pieces of bacon & garlic powder and saute for another 2 minutes
  3. Finally, add your grated asiago cheese over your spinach mixture, sprinkle with salt and pepper, and remove from heat.

Baking:

  1. Take a muffin pan and grease the tin with cooking spray. Place two in each cup.
  2. Place your spinach mixture over the top, sprinkle lightly with crumb mixture, add your grated mozzarella over the top of your spinach and sprinkle with remaining crispy bacon pieces.
  3. Place in the oven for 4-5 minutes at 400 degrees (or until the shredded cheese on top melts), switch the range to broil and cook until the tops become golden brown.
  4. Remove the baking pan from the oven, and carefully spoon the mixture onto your plate of choice.
