  • 2 dozen oysters (raw)
  • 1 cup unsalted butter divided
  • 1/2 cup green onions chopped
  • 5 cloves fresh garlic minced
  • 1/2 teaspoon crushed red pepper
  • 1 ½ teaspoons dried thyme
  • ½ teaspoon dried oregano
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon Worchestershire sauce
  • 1 tablespoon Cajun seasoning
  • 1 ounce white wine
  • ½ cup freshly grated Parmesan cheese
  • 1 loaf French bread or saltine crackers


  1. In a medium saucepan, melt 1/2 cup butter over medium heat.
  2. Add green onions, garlic, red pepper, thyme, oregano, lemon juice, Worcestershire sauce, and Creole seasoning to the pot.
  3. Sauté butter mixture for two minutes. Add white wine.
  4. Continue to sauté until the green onions are soft, stirring frequently.
  5. Remove saucepan from the heat and allow to cool for 3 minutes.
  6. Add the remaining 1/2 cup of butter to the sauce. Stir until the butter is completely melted and the sauce has a smooth texture.
  7. Place one oyster in the center of each cup in a muffin pan.
  8. Place one tablespoon of the butter garlic sauce on top of each oyster.
  9. Bake for 5-7 minutes, or until the butter begins bubbly brown and the oysters rise.
  10. Remove the dish from the oven and sprinkle with Parmesan cheese. Continue to bake for an additional 1-2 minutes, or until the cheese is melted.

  • 2 pkg 10 oz frozen chopped spinach (or you can use fresh spinach)
  • 10 slices of your favorite bacon (oven prepared)
  • 1/2 c asiago cheese, grated
  • 1/2 c mozzarella cheese, grated
  • 1 Tbsp garlic powder
  • 2 Tbsp bread crumbs, seasoned
  • 1 tsp kosher salt
  • 1 teaspoon
  • ½ teaspoon salt
  • 1 teaspoon fresh ground black pepper
  • 2 Tbsp butter (1/4 stick of butter)



  1. Prepare your spinach (package instructions) drain well separately and set aside.
  2. Place your bacon on a baking sheet in a single layer cook 10-12 minutes at 350* remove from oven and place on paper dish towel to drain, then chop in small pieces.
  3. Grate your asiago and mozzarella cheese and place in separate bowl.
  4. Lastly, place your oysters in a medium bowl and gently pick through for shell particles.


  1. Add your cooked spinach to 2tbs of melted butter in a large skillet and gently saute 2-3 minutes over medium-high heat.
  2. Add 4-5 pieces bacon & garlic powder and saute another 2 minutes
  3. Finally, add your grated asiago cheese over top of your spinach mixture, sprinkle with salt and pepper, and remove from heat.


  1. Take a muffin pan and grease the tin with cooking spray. Place two of your prepared oysters in each cup.
  2. Place your spinach mixture over the top, sprinkle lightly with crumb mixture, add your grated mozzarella over the top of your spinach and sprinkle with remaining crispy bacon pieces.
  3. Place in the oven for 4-5 minutes at 400 degrees (or until the shredded cheese on top becomes melty), switch oven to broil and cook until the tops become a golden brown.
  4. Remove the baking pan from the oven, and carefully spoon mixture onto your plate of choice.
  5. Serve over the top of a toasted french bread point or crusty bread.
